What is best when you travel to explore the food culture, it is not the food itself but all the interactions occurring when you meet people that cooks or makes the products you are eating. Cooking is never just preparing something to eat, but instead is the time to share life experiences and stories facilitated by the food preparation. If you can leave beyond your own cultural judgments, it becomes a wonderful exchange of history, culture and local use and costumes. 

When this happens in a totally different culture, and you are able to avoid comparison with what is known for you, it really becomes an enhancing of experience that goes beyond what you are eating or making. That what exactly happened to me at the Mai Home Cooking School in HCMC and here there is the full story.
Below the recipe of the Imperial Fried Rice, Cơm Hoàng bào in the local language. Hoping that while you are making it you will also have a great chat with the people you around you, either online of in person enjoy.


1 cup of cooked rice, better if it is from the day before and dry, you can boil it a few hours before and leave it in the fridge. It should work.
1 chicken egg.
2 tbsp. of chopped shallots.
2 Heads of spring onion, sliced finely.
1 tbsp. of seeds oil
A pinch of chicken powder, this is MSG which is widely  used in Asia, I would avoid it.
Half teaspoon of black pepper.

Quando questo accade in una cultura totalmente diversa, e riesci a evitare il confronto con ciò che ti è noto, diventa un’ esperienza che va oltre ciò che stai mangiando o preparando. Questo è esattamente quello che mi è successo alla Mai Home Cooking School di Ho Chi Minh e qui trovi la storia completa.
Di seguito la ricetta del Riso Fritto Imperiale, Cơm Hoàng bào nella lingua locale. Sperando che mentre lo stai facendo avrai anche una bella chiacchierata con le persone che ti circondano, sia online che di persona.


1 tazza di riso cotto, meglio se del giorno prima e asciutto, potete lessarlo qualche ora prima e lasciarlo in frigo. Dovrebbe funzionare.
1 uovo di gallina
2 cucchiai di scalogno tritato.
2 teste di cipollotto, affettate finemente.
1 cucchiaio. di olio di semi
Un pizzico di polvere di pollo, questo è glutammato monosodico largamente usato in Asia, lo eviterei.
Mezzo cucchiaino di pepe nero.
