Back to our cooking classes...... On the 7th of Ju Back to our cooking classes......
On the 7th of June we will meet at the @waldhotelamsee for a cooking session from 6 pm to 9. 
The menu will be: 
Zucchini Carpaccio
Ravioli from scratch 
Ricotta and Chocolate Cake

A welcome focaccia will be there to welcome you and Aglianico and Falanghina Bio-wines from @fontana_reale winery will make everything "flowing" better.

Beside information about what we were cooking and eating after; Lua was telling me that the choice of running a cooking class business came almost by accident. She was involved in a completely different business and at one point while traveling made a cooking class session for her friends. They loved it, she loved it so a new cooking school was born. I love hearing story of this kind, as I often say when people enter the food business driven by passion are in many cases more attentive to products and recipes. With all the respect for chef trained professional, people that I admire a lot. However sometimes as per any other profession it becomes just a job. Lua’s was sharing with us her family recipes and stories with a sincere passion. On the menu that day we had: Chå Giò, Bò Kho and Chè Chuõi. In English: Fried rolls, Vietnamese beef stew and banana pudding. Not a bad lunch ahead.

Oltre alle informazioni su cosa  dovevamo cucinare e mangiare successivamente; Lua mi diceva che la scelta di fare corsi di cucina è arrivata quasi per caso. Prima era coinvolta in un’attività completamente diversa e ad un certo punto durante un viaggio organizzo’ un corso di cucina per i suoi amici. Loro lo amarono, lei lo adoro’ e così è nata una nuova scuola di cucina. Adoro ascoltare storie di questo genere, come dico spesso; le persone che entrano nel mondo del food spinte dalla passione sono in molti casi più attente ai prodotti e alle ricette. Con tutto il rispetto per i professionisti, persone che ammiro molto. Tuttavia a volte come per qualsiasi altra professione diventa solo un lavoro. Mentre Lua’s condivideva con noi le sue ricette e storie di famiglia con una sincera passione. Il menu di quel giorno era: Chå Giò, Bò Kho e Chè Chuõi. Tradotto: involtini fritti, stufato di manzo vietnamita e budino alla banana. Non male! Pensai.

“Chả giò” (or Nem Rán in the North) is pro “Chả giò” (or Nem Rán in the North) is probably one of the most famous, copied and probably miss understood dish of Vietnamese cuisine. I was lucky enough to learn it from Lua e local running @luaskitchen.cookingclass while I was on an undercover mission for @hellocookly in Ho Chi Minh City. While sipping my beer the weather changed and some clouds start to cover the sun. I had another swim and while lying on the beach I was checking for local restaurant of the area. Something not fancy,” but the local the better”. Doing so I spotted a restaurant at the very left side of the beach. Its name was Thanh Nga Seafood beach restaurant. From the pictures looked like what I was looking for local setting with local recipes. Job Done!

Mentre sorseggio la mia birra il tempo cambo’, Qualche nuvola inizio’ a coprire il sole. Feci un’altra nuotata e mentre ero sdraiato sulla spiaggia cercai un ristorante locale della zona. Qualcosa di non elegante, maquanto piu’ possibile locale. Sbirciando sulla mappa vidi un ristorante all’estrema sinistra della spiaggia. Il suo nome era Thanh Nga Seafood. Dalle immagini sembrava quello che stavo cercando: atmosfera locale con ricette locali. Fatto!
